Following fermentation our best wines are racked for six months of maceration in barrels made from mature French oak trees, each with a capacity of 225 litres, weight of 42 kg and 21 mm thick.

 

The oak for our barrels is durmast, sourced exclusively from private estate forests. The trees are selected individually, grown in poor quality soil, preferably sandy, giving slow but steady development. The oak must be at least 150 years old and 80 cm in diameter.

 

This rigorous and exclusive selection from private estate forests contributes aromatic components four times richer in noble tannins, which enhance the innate quality of the grapes.

Red:

Produced from a selection of plots of Syrah and Cabernet, and blended after a lengthy maceration under controlled temperature, the wine is matured in oak barrels for between six to twelve months.

The wine, aged in barrels made from new oak, comprises 2/3 Syrah and 1/3 Cabernet. It won the silver medal at the concours general agricole in Paris in 2009. In order to preserve its aroma, the wine is neither fined nor filtered; therefore, a natural deposit may be thrown, but hence it retains its tannins and powerful character.

Serve at a temperature of 20°C.

You can either drink it straight away or else let it age for a while in your cellar. If you are patient, it can prove worthwhile as the wine will definitely improve with age.

It is beautifully deep red in colour, with a woody complex aroma of slightly crystallized red fruits, long finish, very pleasantly full-bodied with a hint of vanilla flavour. It will go perfectly with game or red meat, as well as strong cheeses, as characterful as the wine itself.

Serve at room temperature. Remove the cork a short while before your meal.

White

Produced in smaller quantities than the red, it benefits from an early contact with the barrels, from which it draws the finest woody aromas. Because the wood overtones need to be but slight in order not to overpower the taste of the Rolle and Ugni blanc, the two grape varieties which make up this wine, with its scent of citrus fruit and white flowers.

Serve at 18°C.
